A very momentous occasion has just been celebrated by sugar addicts everywhere - National Pie Day. This day was to be enjoyed on January 23rd. Sadly, I was not able to celebrate with a slice of apple, pecan, or pumpkin pie. I was in Houston, sitting in waiting rooms and drinking barium - something I do not recommend. I find it fitting that NPD was commemorated just 2 days after MLK Day, because I have a dream, a dream that we all eat pie, not just on National Pie Day, but every day. That's what I call equality. Not to be totally cut out of dessert palooza, I did make and enjoy a chocolate chip pie for my cousin Hannah's 18th birthday. Even though I was 24 hr. late, it was still wonderful. And for those of you who never knew that a pie could be made of something besides pumpkin, here is the recipe below. Enjoy!
Hannah's Favorite Chocolate Chip Pie
8 oz. chocolate chips
1/2 C. flour
1 C. sugar
2 eggs
1 t. vanilla
1 stick butter, melted
Combine ingredients and place in an uncooked pie shell at 350 degrees for 30 min.
